Chicken Cacciatore

(Serves 2)
1 chicken breast fillet, chopped into chunks
7 Always Fresh Marinated Mushrooms
1 tbsp Fountain Pizza Paste
2 Always Fresh Anchovies, chopped
10 Always Fresh Spanish Pitted Black Olives
½ glass red wine
½ brown onion, chopped
1 clove of garlic, finely chopped
Handful of parsley, chopped
1 small red chilli, finely chopped
Splash extra virgin olive oil


Heat the oil in a frying pan. Toss in the chicken pieces, olives and mushrooms. Fry until sealed. Add in the onion, garlic and chilli. Toss in the anchovies and stir through until broken down. Cook for about 2-4 minutes.
Add the red wine into the pan and boil. Stir through the tomato paste. Pop on a lid and simmer for 5 minutes.
Serve with pasta or rice with a good sprinkle of chopped parsley.
