Chicken Ceasar Salad

(Serves 2-4)
1 cos lettuce
1 chicken breast
4 slices of short cut bacon
4 eggs
4 slices of bread
2 spring onions (finely sliced)
1 cup of shaved Parmesan cheese
1 cup of whole egg mayonnaise
2 anchovies (mashed with a fork)
½ cup of chopped parsley
2 tsp white balsamic vinegar
2 tsp extra virgin olive oil
Grind of pepper


Cut the cos lettuce in half down the middle then wash and dry discarding the outer “woody green leaves.
Slice the chicken breast into thin slices and fry together with the bacon in hot olive oil, then remove from the pan and set aside.
Cut the bread into small triangles and fry in the chicken and bacon oil until crispy, then drain onto kitchen paper.
Place the eggs into a saucepan of cold water, bring to a boil, time them for 4 minutes then remove from the pan and chill on ice.
Mix together the mayonnaise, mashed anchovies, spring onions, parsley, pepper, vinegar and oil, then mix until smooth.
Peel and quarter the eggs, then layer with torn lettuce, slices of chicken, bacon, fried bread, parmesan and ceaser dressing.
