Chicken Fried Rice

Ingredients

(Serves 4)
1 chicken breast
200g cooked basmati rice
6 spring onions
½ red capsicum
½ green capsicum
2 cloves garlic
½ long red chilli
1 egg
¼ bunch of coriander
50 ml hoisin sauce
50 ml oyster sauce
2 slices of bacon
½ cup frozen peas

Method

Thinly slice the chicken breast and marinate in the hoisin and oyster sauces for about half an hour.
Thinly slice the red and green capsicums, red chilli, spring onions, garlic and bacon then quickly fry until just softened then remove from the pan and set aside.
Beat the egg then fry until just set into a flat omelette, remove from the pan.
Re- heat the pan then fry the chicken breast until just cooked, tumble in the cooked rice and frozen peas then put a lid on the pan and allow to heat through for about 3-5 minutes (careful not to burn the rice.)
Once the rice is heated through re-introduce sautéed capsicum mix, the sliced egg.
And finally top with chopped coriander.
