Chicken in Blanket

(Serves 4)
2 chicken breast
4 slices medium sliced ham
100g small marinated button mushrooms sliced
100g cottage cheese
100ml beef stock
50g butter
50g flour
350-400ml milk
2 sheets puff pastry
1 egg, for eggwash


Slice the chicken breast in half lengthwise and in a hot pan seal on both sides, remove and allow to cool.

In the same pan melt the butter then fry the mushrooms until well cooked then stir in the flour and cook for 2 minutes.

Slowly pour in the chicken stock and milk while stirring constantly until all combined, approx 5 minutes.

Cut the pastry in half diagonally place 1 slice of ham, then chicken breast on top, spoon ½ tbsp cottage cheese and fold over the puff pastry, brush with egg wash and bake at 230°C for 15 minutes.

Serve with greens and sauce.
