Chicken Satay Skewers with Pea & Lime Dip

(Serves 2)
1 chicken breast fillet
100ml Fountain Satay Sauce
100ml coconut cream
150g frozen peas
100ml natural yoghurt
Squeeze of lime juice
Coriander, chopped


Cut the chicken into strips and thread onto skewers. Place into a container. Mix the satay sauce and coconut cream together and pour over the skewers. Refrigerate for 30 minutes.
In the meantime, drop the peas into boiling water and drain. Add the lime juice and coriander and blend together using a stick mixer until mostly pureed. Stir through the yoghurt for a yummy dip.
On a hot grill plate, fry the satay skewers for approx. 3 minutes each side.
Serve the skewers with a dip of satay sauce and the pea & lime dip.
