Chicken & Spinach Egg Drop Soup

(Serves 2-4)

1 chicken breast fillet, chopped
1 litre beef stock
200ml water
200g washed baby spinach leaves
2 egg whites


Place the stock, water and chicken pieces into a large pot.

Bring to the boil and simmer for 10 -15 minutes.

Drop in the spinach and blend the soup with Mr. Buzzy, until smooth.

Pour in the egg whites and buzz on low speed to combine.
