Chinese Dumplings

(Serves 4)
100g rice flour
100g arrowroot
100g plain flour
½ tsp yeast
½ tsp salt
½ tsp sugar
200ml warm water
200g pork mince
4 spring onions, finely chopped
1 small chilli, finely chopped
1 tsp crushed garlic
½ tsp ground white pepper
50ml soy sauce


Sift together the flour, arrowroot then add the yeast, salt and sugar until all combined then pour in the water gradually while mixing until dough is formed, set aside for 2 hours to prove.

Mix together the pork, spring onion, garlic, chilli, pepper and soy sauce until all combined.

Roll out 5cm circles of dough, fill with a heaped teaspoon of pork mix then seal together with a pinch then steam for 5-10 minutes, serve with dipping sauces of your choice.
Dipping sauces used on the show
1.Finely chopped coriander, mixed with a good soy sauce.
2. Kecap manis with splash of sesame oil and squeeze of lime juice.
