Chorizo Rice Paper Rolls

(Serves 4)
2 Chorizo sausages, chopped
½ jar Always Fresh Lentil Salad
Bunch of roquet, chop the base leaves and keep the top leaves whole
150g pack rice paper
Splash red wine vinegar
Mustard Dip
Warm water
Oil for deep frying


In a large bowl, combine the chorizo, chopped roquet leaves and lentil salad.
Submerge the rice paper into a bowl of warm water for a minute until softened. Remove the rice paper and place onto a dry tea towel, pat dry with another tea towel.
Fill a sauce bowl with the mustard dip and stir through red wine vinegar. Take 2 tbsp of this dressing and stir through the chorizo mixture.
Lay down a sheet of rice paper. Place 1 large roquet leaf, a spoon of the chorizo mixture and roll over. Fold over the sides then continue to roll tightly.
Heat oil for deep frying (180°C). Deep fry the rice paper rolls until golden brown and serve with the mustard dip.
