Date & Raisin Eggless Cake

200g stoned dates, roughly chopped
300ml water
85g plain flour
3tsp baking powder
1tsp ground mixed spice
85g wholemeal flour
375g bag dried, mixed fruit
80ml orange juice
100g carob, chopped


Preheat the oven to 170°C-180°C.

Put the dates and water in a pan and bring to the boil for a couple of minutes. Remove the pan from the heat and set aside.

Sieve the plain and wholemeal flours, baking powder and mixed spice into a bowl. Add the mixed fruit and carob and stir to combine. Stir in the date with the water and the orange juice. Mix well.

Spoon into a pre lined loaf tin, bake for 45-50 minutes, or until a skewer comes out clean.

Turn out onto a wire rack and cool.
