Flat Bread Hotdogs

(Serves 3-6)
500g beef sausages
2 Onions sliced
2 heaped tbsp mayonnaise
1 pack corn tortilla
1 pack strong and bitey bega sliced cheese
200g cherry tomatoes, cut in half
80 ml balsamic vinegar
Salt and pepper
Splash of extra virgin olive oil
6 baby gherkins, sliced thinly
½ cup flat leaf parsley, chopped
Juice of half a lemon
Zest of ¼ lemon, chopped fine


Warm a pan, add a splash of olive oil and cook sausages for 5-10 minutes.

Balsamic tomato relish
Heat a non stick pan add a splash of olive oil and the sliced onions and cook until translucent, add the cherry tomatoes and balsamic vinegar and boil until reduced by half, then toss in the chopped parsley

Lemon and gherkin mayo’
Combine the lemon juice and zest with the mayonnaise and sliced gherkins

Heat the flat bread then lay down 2 sausages, 2 slices of cheese, a dollop of lemon gherkin mayo’ and 2 tbsp of balsamic tomato relish then roll up and serve.
