BBQ Fruit Parcels

Ingredients

(Serves 4-6)
2 green apples, cored and cut into wedges
2 peaches
2 oranges
8 sugar plums
1 mango
1 lemon
1 lime
2 cinnamon quills
1/3  Vanilla pod
3 tbsp caster sugar
15-20 ml water
125 g Mascarpone
2 bananas
Baking paper
Alfoil

Method

Heat a non stick pan, pour in the sugar, break off a 2 cm piece of cinnamon and add to the pan with the vanilla pod, water, lemon & lime zest and allow to bubble to a nice syrup then set aside for later.

In a large bowl squeeze the lemon and lime juice over the quartered apples to stop them browning.
Peel and segment the oranges and place into the bowl with the apples and squeeze any remaining juice from the orange peel
Add the halved and seeded plums, quartered peaches and mango flesh and toss all together.

Lay down 1, 20cm piece of alfoil and top with a 15cm piece of baking paper.
Place 2 serving spoons of fruit mixture onto the baking paper and a ¼ of a cinnamon quill add 1 tbsp of syrup mixture then wrap the foil into a parcel

Mash the 2 bananas with 2 tbsp of syrup then mix into the mascarpone until all combined.

Place the wrapped fruit parcel onto a flat BBQ plate for 5-10 minutes (or into a hot oven @ 200°C for 5-10 minutes)
Then serve with a dollop of banana mascarpone.
