Fruity Ricotta Grilled Sandwich

(Serves 2)
4 slices thick cut bread
4 tbsp smooth ricotta
2 tbsp raisins
1 tbsp dried dates
½ cup orange juice
¼ tsp cinnamon
¼ tsp nutmeg
Olive oil


Soak the dried fruit in the orange juice for at least ½ hour.
Mix together the ricotta, cinnamon and nutmeg.
Drain the orange juice off of the fruit (if not completely soaked in) then mix in with the ricotta.
Spread one slice of bread with half the fruity ricotta mix then place on the lid, then repeat with the next 2 slices.
Place onto hot grill plate, with a light splash of oil, for about 3 minutes either side or until crispy, then cut in half and serve.
