Gammo Steak with Apple & Potato Rosti

(Serves 1)

1 Gypsy ham steak (approx 2cm thick)
1 potato, peeled and grated
1 green apple, grated
1 egg
3 sprigs lemon thyme, chopped
1/3 zucchini, julienne
4 snow peas, julienne
Handful of baby silverbeet, chopped
½ clove of garlic, thinly sliced
Splash of water
Salt and pepper
Extra virgin olive oil


Drizzle the ham steak with oil and season with salt and pepper. Place onto a hot grill plate. Grill for approx. 5 minutes on each side.

In a mixing bowl, combine the potato, apple, egg, salt, pepper and thyme leaves.
Splash oil into a hot pan and fry the apple and potato rosti until browned on both sides. Remove.

Toss the silverbeet, snow peas, zucchini and garlic together in a hot pan with a splash of water and grind of salt and pepper until heated.
Serve Gammo Steak with the Rosti and side of greens.
