Green Onion & Garlic Roti Bread

(Serves 4)
2 cups plain flour
1 cup corn flour
1 tsp salt
1 tsp sugar
1 tsp dried yeast
1 cup warm water
4 spring onions, finely sliced
2-3 cloves garlic, finely sliced
2 tsp olive oil


Combine all the dry ingredients in a blender. Mix in the water until a ball is formed. Toss in the garlic and spring onions and mix until combined. (It is a slightly wet mixture.)
Sprinkle flour onto the bench, empty the dough out and lightly knead. Set aside for 10-15 minutes to rest.
Cut the dough into 5-10cm balls and roll out into Roti as flat as you can.
Place oil into a hot pan, place in one Roti bread, fry for approximately 2 minutes, then flip and fry the other side for the same time.
