Honeyed Fruit Hotcakes

(Serves 4)
2 bananas, roughly chopped
8 strawberries
1punnet blueberries
1 mango, roughly chopped
3 tbsp honey
Splash of white wine

6 eggs
200g self-raising flour
100ml thickened cream
2 tbsp honey
50g unsalted butter


Mix together the eggs, cream and honey.
Add the flour whilst stirring until a medium to thick consistency is reached.

Place butter into a warm pan and spoon in the hotcake mixture to desired size. Flip once bubbles have formed on the top surface, and cook on the other side.

(Honeyed Fruit) Place the strawberries and 3 tbsp honey into pan. Splash in the white wine and simmer for a minute.

Add the blueberries, banana and mango and gently boil for 5 minutes. Pour over hotcakes.
