Individual Baked Pasta

(Serves 2-4)

250g short pasta (macaroni/twirls)
½ butternut pumpkin, diced 2cm
200g grated cheese
1 tsp crushed garlic
1 small salad onion, finely chopped
50g pitted kalamata olives, finely chopped
½ cup fresh oregano, chopped
2 tbsp pizza paste
Splash olive oil, for roasting pumpkin
Salt & pepper, for roasting pumpkin


Precook the pasta in salted boiling water until al dente.

Pre roast the pumpkin. (Drizzle over with olive oil and toss in salt and pepper.

Roast at 200°C for 30 minutes)
In a large mixing bowl, combine all ingredients.
Line a muffin tray with 12 muffin wraps and divide the pasta mixture between them.

(Sprinkle extra cheese on top if desired.)
Bake at 220°C for 15-20 minutes, or until cheese is melted and crisp on top.
