Mango & Mayo Potted Prawns

Ingredients

(Serves 4)
200g raw prawns, roughly chopped
½ Spanish onion
100g salt reduced butter
Splash of brandy
4tbsp whole egg mayonnaise
½ tin mangoes, finely chopped
½ long red chilli, finely chopped
Salt


Method

Melt half the butter in a frypan then quickly fry the chopped prawns, onion and chilli until the prawns have just changed colour, de- glaze the pan with the brandy then remove from the pan and allow to cool.
In a bowl, mix together the mayo and cooled prawns with a touch of salt.
Melt the rest of the butter in a pan, press the prawn mixture into individual ramekins (or muffin papers) and top with approx. 1 tbsp of melted butter over each.
Chill in the fridge until the butter is set then serve.
