Mango Parfait

(Serves 4)
4 egg yolks
2 tbsp caster sugar
100ml thickened cream
425g tin sliced mangoes in syrup
Chocolate syrup


Place the mango cheeks, egg yolks, cream and sugar into a blender and blend until completely smooth.

Pour the mixture into patty pans and refrigerate for at least 20 minutes.

Remove the parfait from the patty pan and place onto serving plate. Drizzle chocolate syrup over as decoration and serve.
