(Makes approx. 700g)
1 egg
¼ Spanish onion
1 tsp Dijon mustard
Splash of white balsamic vinegar
500-700ml sunflower oil


In a blender, combine the egg, onion, mustard and vinegar until light and fluffy.
Drizzle in the oil slowly and gradually, whilst continuing to blend until you reach your desired consistency.


(Makes approx. 400g)

3 small avocados
1 clove of garlic
2 tbsp sour cream
1 tsp chilli paste
Juice of ¼ lemon
1 tbsp mayonnaise

Place the avocado and garlic into a blender and pulse until combined.
Add the remaining ingredients and blend until smooth.
