Minty Passion Stuffed Apples

(Serves 4)
4 apples
250g cottage cheese
½ cup fresh mint leaves, roughly chopped
2 passion fruit
200ml milk
½ vanilla pod, slice open
2 tbsp arrowroot


Cut the top off of the apples and using a melon baller, scoop out the core and half the apple flesh.

In a mixing bowl, combine the apple flesh with the passionfruit pulp, mint and cottage cheese.
Stuff the cottage cheese mix into the apples, and steam for 10-15 minutes.

In a saucepan simmer the milk with the vanilla pod for 5 minutes. Be sure to mash the pod, whilst stirring to release the beans.

Wet the arrowroot with a small amount of water and gradually stir through the vanilla milk until a thick and smooth consistency is reached.
Serve vanilla sauce with the steamed apples.
