Moist Microwave Carrot Cake

Ingredients

• 1 cup wholemeal self-raising flour
• ¾ cup brown sugar (firmly packed)
• 2 teaspoons cinnamon
• 2 cups finely grated carrots
• ½ cup chopped raisins
• ½ cup oil
• 2 eggs

Frosting (optional)

• 60g packaged light cream cheese
• 30g butter
• 1 ½ cups icing sugar, sifted
• 2 – 3 teaspoons lemon juice
• ½ cup walnuts for decoration

Method

• Combine flour, sugar, cinnamon, carrot & raisins in a bowl, stir in combined oil & eggs.
• Pour into ungreased, base lined 20cm ring cake pan.
• Cook on MEDIUM HIGH 8 minutes or until just cooked.
• Stand for 5 minutes
• Turn onto wire rack to cool.
• Top with frosting & walnuts or sifted icing sugar
• Frosting - beat cream cheese & butter with electric mixer until smooth
• Gradually beat in icing sugar & lemon
