(Makes 30-40)

2 sheets puff pastry
100g softened unsalted butter
2 tbsp brown sugar
1 tsp ground cinnamon
1 tsp mixed spice
1 egg, beaten


Thoroughly mix together the butter, sugar and spices with a fork.
Cut the pastry sheets in half down the middle so that there are 4 sections.
Brush the pastry liberally with some beaten egg.
Evenly spread the butter mixture over the surface of the pastry, then fold each side over on itself (lengthways) towards the centre until they meet.
Cut the roll into thin slices (approx. 1 cm) and place onto a lined baking tray.
Bake in the oven at 200°C for about 5-10 minutes.
