Pecan Pie

Ingredients

Pastry
60g unsalted butter
150ml cream
1 ½ tsp caster sugar
2 drops vanilla essence
1 ½ cups self raising flour

Pecan Mixture
200g pecan nuts
4 eggs
2 tbsp maple syrup
100g caster sugar

Method

Pastry
Whisk together the butter, cream, sugar and vanilla essence. Slowly fold in the flour.
Empty onto a bench and knead until smooth and shiny.
Roll the pastry out and line it into a flan tray.

Pecan Mixture
In a mixing bowl, whisk together the eggs, sugar and maple syrup until fully combined.
Stir through the pecan nuts and spread into the pastry lined flan tray.
Place into a preheated oven at 195°C for 20 minutes.
