Pizza Crumbed Cutlets

(Serves 4)

8 lamb cutlets
2 tbsp pizza paste
200g breadcrumbs
1½ cups grated Parmesan cheese
Oil for deep frying


Coat the lamb cutlets with the pizza paste.
Mix the cheese with the breadcrumbs, then dredge the tomato coated cutlets through the breadcrumb mix. Press down firmly. Refrigerate for 15-20 minutes.
Deep fry in hot oil until crispy (approx. 3-4 minutes) and serve with green vegetables.
