Pork & Olive Balls

(Serves 4-6)

8 spring onions
½ bunch coriander
2 cloves of garlic
2 tbsp tomato paste
400g minced pork
1 egg
170g mixed olives
100g rice flour
120-200ml beef stock
Salt and pepper


Place the spring onions into a food processor and blend until finely chopped.
Add the coriander, garlic, salt and pepper and continue blending.

Add the tomato paste, minced pork, egg and olives and combine.

Finally, whilst blending, pour in the rice flour until combined.

Form into balls and place onto an oven tray.
Pour over with the stock and place into a preheated oven at 220°C for 10-15 minutes.
