Potato and Onion Nut Pie

Ingredients

(Serves 2)
1 kg potatoes
3 onions
150g walnuts
Knob of butter
100g butter
Handful of Bega Bar B Cubes cheese
Splash of extra virgin olive oil
50ml oyster sauce
50ml balsamic vinegar
Salt & pepper


Method

Slice the onions as thin as you can, then fry in a knob of hot butter with a splash of olive oil.

When soft pour in half of the walnuts, vinegar and oyster sauce and simmer until thick.

Peel and chop the potatoes, place into a pot with water and boil until soft. Drain of water and roughly mash the potatoes. Add the 100g butter, season with salt and pepper and mix thoroughly.

In an ovenproof large pie dish, fill with mashed potato, spoon over the onion/walnut mixture, tumble over the cheese and remaining walnuts.

Place under a preheated hot grill until cheese is melted.
