Potato & Pistu Pizza

(Serves 4)

Pistu
¼ bunch flat leaf parsley
¼ bunch curly parsley
¼ bunch chives
¼ bunch of sage
3-4 tbsp extra virgin olive oil

Place all herbs into a food processor and blend until smooth.
Pour in the extra virgin olive oil and blend until all combined.

Pistu & Potato Pizza Topping
3 potatoes, thinly sliced
10-12 cherry tomatoes
2 cloves of garlic, thinly sliced
½ sprig of rosemary
½ cup grated mozzarella
1 tbsp pistu

Spread the pistu over the pizza base, then the finely sliced potato, cherry tomatoes and garlic.
Sprinkle on the rosemary then the cheese and bake at 225°C for 5-8 minutes

Baked Ham & Olive Pizza Topping
150g baked ham (from the freezer, left over from Christmas)
100g pitted black olives
2 cloves of garlic, finely sliced
¼ cup of torn basil leaves
½ cup grated mozzarella
1 tbsp pistu

Spread the pistu over the pizza base, then the ham, tomatoes, olives and garlic.
Sprinkle on the basil then the cheese and bake at 225°C for 5-8 minutes.
