Scotch Eggs

(Makes 6)
250g minced pork
250g sausage meat
½ Spanish onion, finely chopped
1tbsp Worcester sauce
6 eggs
½ cup finely chopped parsley
1tsp white pepper
100g plain flour
2eggs (egg wash)
200g breadcrumbs
1tsp paprika
Oil for deep frying


Place the 6 eggs into a saucepan of cold water, bring to a boil, time them for 4 minutes when boiling then remove from the pan and refresh in cold water.
Mix together the pork, sausage meat, onion, Worcester, parsley, paprika and pepper until all combined.
Peel the eggs then gently wrap each one with the mince mixture until completely covered and formed into a ball (be careful not to have gaps.)
Pass the mince wrapped eggs through flour, egg wash, then breadcrumbs.
Deep fry until golden brown, allow to cool before serving.
