Slow Roasted Tomatoes

6 Roma tomatoes
1 Spanish onion
2 cloves garlic, thinly sliced
Mixed Spice
Salt & Pepper
Olive oil


Slice the onions into rings (approx. 3mm thick) and line into a baking tray.
Cut the tomatoes in half (lengthways) and lay on top of the onions.
Drizzle with olive oil, then sprinkle with mixed spice, salt and pepper.
Place the sliced garlic over the tomatoes and bake at 180°C for 45 minutes.

Serve with toasted bread, or as a tasty side to any main meal.
