Smoky Ham & Brocollini Soup

(Serves 4)

1 ham bone
200g ham
1 litre of beef stock
200g pearl barley
3 litres of water
1 bunch of broccolini
2 chopped spring onions


Remove the florets from the brocollini and set aside.
Place the ham bone, pearl barley, stock, water, onions and brocollini stalks in a large pan, bring to a boil then simmer for at least 2-3 hours.
Once the soup has cooked remove the ham bone, bring back to a boil and add the brocollini florets and chopped ham and cook for 2 minutes then serve.
