Sesame Ginger & Soy Grilled Salmon with Sprouted Legume Salad

Ingredients

(Serves 4)
2 salmon fillets, skin removed
125ml Kikkoman Sesame Ginger and Soy Marinade
200g mixed sprouts
¼ cup curly parsley, chopped
½ cup dill, chopped
½ cucumber, peeled and diced
1 tbsp whole egg mayonnaise
1 tsp red wine vinegar
½ tsp sesame seeds
1 tsp freshly grated ginger

Method

Cut each salmon fillet into 3 pieces. Place into an airtight container, coat with the marinade and refrigerate for 30-60 minutes.
In a mixing bowl, combine the sprouts, cucumber, parsley, dill and ginger.
In a small bowl, stir together the mayonnaise and red wine vinegar, then pour over the salad, stir through and sprinkle over the sesame seeds.
On a red-hot grill plate, place the marinated salmon pieces and grill for 3-4 minutes on each side. Serve salmon with the sprouted legume salad.
