Soy Tossed Greens

(Serves 4)

1 small broccoli, divided into florets and the stalk, peeled, then sliced
1 stick of celery, thinly sliced diagonally
100g snow peas, ends removed
1 leek, sliced 1cm thick
100g bean sprouts
3 spring onions, sliced diagonally
100g green beans, ends removed
½ green chilli, finely sliced
1 zucchini, thinly sliced
1 knob ginger (5cm) julienne
80ml soy sauce
Splash extra virgin olive oil


Heat a pan with a splash of extra virgin olive oil.

Toss in the broccoli, leek and celery first, stir, pop on a lid and cook for 2 minutes.

Add the snow peas, spring onions, beans and bean sprouts, stir, pop the lid on and cook for another 2 minutes.

Add the chilli, zucchini and the soy sauce and toss together. Cover with a lid.

Add the ginger and stir through for 2 minutes. Serve
