Spiced Chocolate Polenta Cake

(Serves 8-10)
4 eggs
80-160g brown sugar
3 drops of vanilla essence
100g dark chocolate buttons
200ml milk
200g polenta
¼ tsp chilli flakes
60g pecan nuts
½ tsp baking powder


Place the eggs into your mixture add the brown sugar and vanilla then whisk for 5 minutes or until light and fluffy.

Turn the mixture down to low and drizzle in the milk, add the chocolate buttons.

Slowly add the polenta then pour in the chilli and baking powder and mix until all combined.
Place the pecan nuts in the bottom of the bunt ring, pour in the cake mix and bake in a pre-heated oven set to 180°C for 45 minutes.
Allow to cool for at least 15 minutes before removing from the bunt ring.
