Stuffed Beef Schnitzels

(Serves 4)
4 slices of beef schnitzel
1 tbsp pizza sauce
2 slices of bacon
½ cup of cubed cheese
½ cup of basil leaves
100g flour
150g breadcrumbs
1 egg
Oil for frying


Place 1 slice of schnitzel on the bench spread with a tsp. of pizza sauce and top with a slice of bacon, a couple of cubes of cheese and 2 basil leaves, then brush the edges with egg wash.
Place a second schnitzel on top and press firmly to seal.
Gently pass the stuffed schnitzel through the flour, egg and breadcrumb mix then onto a plate and in the fridge for at least ½ an hour.
Shallow fry in hot oil until golden brown on both sides.
