Thai Fried Tuna Cakes

(Makes approx. 12)

250g fresh tuna, chopped into thin slices
4 spring onions, finely sliced
1 tsp red Thai curry paste
100g rice flour
1 egg
½ tsp bi-carb soda
100ml sweet chili sauce
100ml thick mint sauce
6 drops of fish sauce
Splash of sesame oil
Sunflower oil (for deep-frying)


Make the dipping sauce by combining the sweet chilli, mint sauce, splash of sesame oil and fish sauce.

In a large mixing bowl combine tuna, onions, curry paste, rice flour, egg and bi- carb, 4 tbsp of dipping sauce and mix until evenly mixed.

Form into patties about the size of a tablespoon and deep fry for 1.5-2 minutes or until just firm, golden and crispy.

Serve with sweet chili and mint dipping sauce.
