Three Way Burgers

(Serves 3)

BEEF

150g minced beef
2 tsp Always Fresh Basil and Parmesan Tapenade
Salt and pepper

Combine the above ingredients into a burger pattie. Cook on a red-hot grill plate for approx 5-7 minutes on each side. Serve on a toasted bun with sliced tomato, salt & pepper, cos lettuce, sliced cheese, fried onions, mayo, steak sauce

CHICKEN

1 chicken breast fillet
1 tsp horseradish
Salt and pepper

Smear the fillet with horseradish and season with salt and pepper. Cook on a red-hot grill plate for approx 5-7 minutes on each side. Serve on a toasted bun with sliced tomato, salt & pepper, cos lettuce, sliced cheese, avocado, sliced cucumber, mayo and Dijon mustard.

EGGPLANT

2 slices of eggplant (1cm thick)
2 tsp thick mint sauce
2 tbsp cottage cheese mixed with 5 finely shredded mint leaves

Smear the eggplant steak with mint sauce. . Cook on a red-hot grill plate for approx 2-3 minutes on each side. Serve on a toasted bun with sliced tomato, salt & pepper, cos lettuce, avocado, fried onion and minted cottage cheese.
