Fruity Tomato Chutney

(Makes approx. 500g)
6 peeled tomatoes, roughly chopped
20 grapes
½ a red onion
1 clove of garlic
15 capers
1tsp mixed spice
½ tsp smoked paprika
2tbsp soft brown sugar
50ml red wine vinegar
50ml whisky
100ml water


Chop the onion and garlic then fry until just starting to soften then add the mixed spice and smoked paprika, cook for 1 minute then pour in the vinegar.

Add the peeled tomatoes, capers and grapes and bring to a simmer.

Next pour in the whisky, water and the brown sugar.
Bring the whole lot to a boil then turn down to simmer with no lid for about 20- 40 minutes (or until reduced to a thick chutney consistency.)
