Tomato and Cous Cous Stew

(Serves 4)
4 medium potatoes
1 brown onion
2 carrots
2 cloves garlic
1 zucchini
800g tin crushed tomatoes
1 litre water
150g Cous Cous
2 sprigs basil
Splash olive oil
Splash sweet soy sauce
Splash white balsamic vinegar
Salt & pepper


Peel and chop all the vegetables into 2cm cubes.
Splash olive oil into a pan and heat. Toss in all the chopped vegies, and the whole garlic cloves and stir through. Season with salt and pepper.
Splash in the white balsamic and sweet soy. Add the basil sprigs, crushed tomatoes and water. Bring to the boil, then simmer for 45-60 minutes. (When the potatoes are soft, the stew is ready to be turned off.)
Sprinkle the couscous into the stew, stir through, pop the lid back on and allow to sit for 5 minutes, then serve.
