Vanilla Panna Cotta with Soused Blood Orange

(Makes 9)

Panna Cotta
1 vanilla pod
650ml pure cream
100g caster sugar
2 tbsp gelatin powder
50ml hot water

Soused Blood Orange
3 blood oranges, thinly sliced
100g caster sugar
100ml vodka
1 tbsp glucose syrup
3 small sprigs of lemon thyme


Place the cream into a saucepan with the vanilla pod and 100g of caster sugar.

Simmer gently for 3-5 minutes. Remove the vanilla pod.

Dissolve the gelatin by stirring in hot water. Slowly pour this mixture into the panna cotta until completely blended.

Pour into silicone muffin moulds.

Place onto a cooling rack and refrigerate for a minimum of 2 hours.

Heat a saucepan and add the caster sugar, lemon thyme and glucose.

Once sugar starts to melt, add the blood oranges.

Reduce the heat and simmer for 1-2 minutes.

Add the vodka and boil until it becomes a thick syrup.
