Velvet Braised Cod

(Serves 2)

2 fillets of cod
75ml soy sauce
75ml oyster sauce
75ml hoi sin sauce
200ml vegetable stock
6 spring onions, finely sliced


In a hot pan, mix together all of the sauces and the vegetable stock, and bring to the boil.

Place the fish into the saucy pan, skin side down. Cover with a tight fitting lid and gently simmer for approx. 10 minutes.

Add the spring onions for the final minute of cooking time.

Serve the cod with a drizzle of the dark velvet sauce.
