White Onion Relish

(Makes Approx. 400g)

2 brown onion, thinly sliced
2 large cloves of garlic, chopped
1 tbsp balsamic vinegar
25g unsalted butter
2 whole tomatoes, peeled and chopped
100-150ml vegetable stock
Extra virgin olive oil


In a warm pan, melt the butter and gently fry the onions and garlic until softened.

Stir in the balsamic vinegar, chopped tomatoes and stock.

Bring to the boil, then simmer (stirring occasionally) for 30-40 minutes until reduced.
