Banana Scones


(Makes approx. 10)

3 cups self raising flour
½ cup caster sugar
125g unsalted butter
2 mashed ripe bananas
½ cup milk
½ tsp vanilla essence


Cream together the butter and sugar.
In a separate bowl, mash the banana, stir through the milk and vanilla essence.

Combine both mixtures with a wooden spoon.
Fold through the flour and lightly mix into a dough.

Cut into scones. Bake in a preheated oven at 210C for 10-12 minutes.


Coconut Macaroons
