Cheese & Onion Omelette


(Serves 2-4)
6 eggs
1 cup grated cheddar cheese
60ml thickened cream
6 spring onions, finely chopped
4 sun dried tomatoes, chopped
50g butter
Salt & pepper


In a large mixing bowl, place the eggs, cream, salt and pepper. Whisk together, then mix through the grated cheddar.
Place 25g of the butter into an oven-proof frying pan on medium heat, add in the spring onions and cook until softened. Next, toss in the sun dried tomatoes.
Empty the onions and tomatoes into the egg mix, stirring through. Return the frying pan to the stove, add the remaining butter. When hot, pour the omelette mix in and fry for 1 minute, then place the whole pan under a hot grill until the omelette rises and nicely browns. Approx. 5 minutes.
