Lamb Crouteres


(Serves 4)
300g minced lamb
2 cloves garlic
½ Spanish onion
1 leek, root and top woody leaves removed
2 tbsp tomato paste
500ml chicken stock
Pinch of paprika
Pinch of dried basil
¼ cup breadcrumbs
¼ cup grated cheese


Cut the leek in half, lengthways. Take the larger outer leaves and place them in an ovenproof pan, poach them in the chicken stock until just tender. Chop the inner smaller leaves and mix with the minced lamb.
Finely chop the onion and garlic and mix with the lamb, paprika and basil.
Place the poached leek strips on the bench, spoon the lamb mixture onto one end of the leaf and roll into sausage shapes.
Mix together the poaching stock with the tomato paste then pop in the leek rolled lamb pieces, seam side down.
Sprinkle with breadcrumbs and cheese, then bake at 200°C for 30 minutes.
