Upside Down Banana Cake


4 bananas
250g unsalted butter
250g self raising flour
200g brown sugar
100ml milk
4 eggs


Slice 2 of the bananas lengthways and line the base of a silicone bunt tin. (Use any cake tin you like, grease if necessary.)

Sprinkle about 15g of the brown sugar and 15g of the butter over the bananas.

Using a blender, cream together the butter and sugar until light and fluffy.

Pour the milk and eggs in and combine.
Chop the remaining two bananas and fold through the mixture along with the flour.

Pour the mixture into your cake tin and bake in a preheated oven at 185C for 50-55 minutes.
